Tricolour Quinoa Patties

Looking for a healthy lunch? Then these Tricolour Quinoa Patties are a great choice! Besides being super tasty both warm and cold, they are packed with nutrition like protein and fibre. Also, did you know that quinoa contains all nine essential amino acids?

The patties go really well with fresh salad or make a delicious vegetarian burger patty.

Ingredients
Serves 2
Preparation time: 35 min.

  • 150 g tricolour quinoa

  • 350 ml water

  • 3 eggs

  • 4 tbsp flour

  • 1/2 red onion

  • 2 carrots

  • 30 g grated cheese (or parmesan)

  • 1 vegetable stock cube

  • 1/8 tsp salt

  • 1/8 tsp pepper

  • vegetable oil

  • cream cheese for garnish

  • chopped chives for garnish

Method

  1. To prepare the quinoa: Rinse the quinoa well in a fine-mesh sieve under running water. Add 350 ml water to a small saucepan, crumble in 1 vegetable cube and bring to a boil. Stir the water so the stock cube dissolves.
    Add 150 g quinoa to the saucepan and bring the heat down to a gentle simmer. Cook quinoa for 15 minutes. Remove the saucepan off the heat and cover with a lid for 5 minutes so the quinoa can pop. Then fluff the quinoa with a fork and set it aside.

  2. In the meantime, peel and grate 2 carrots. Finely dice 1/2 red onion.

  3. In a large bowl, mix quinoa, carrots, onion, 4 tbsp flour, 3 eggs, 30 g grated cheese and 1/8 tsp salt and 1/8 tsp pepper until well combined.

  4. Form quinoa mix into patties. If the texture is too sticky or moist, add more flour.

  5. In a frying pan, heat a lug of vegetable oil to medium-high heat. Add patties and fry for 2-3 minutes from each side until they have turned golden brown.

  6. Serve with 1 tsp of cream cheese on each patty and garnish with chopped chives.
