Zucchini Fritters with Salmon & Cream Cheese
These zucchini fritters with cream cheese and salmon are healthy and delicious brunch or lunch dish. For the veggie version simply leave away the salmon - they will still taste addictively good!
Ingredients
3 courgettes
1/2 white onion
2 garlic cloves
4 eggs
100 g flour
80 g feta
2 tsp salt
1/2 tsp pepper
1/2 tsp chilli flakes
100 g smoked salmon
150 g cream cheese
dill
1 lemon
vegetable oil
Method
Wash 3 courgettes, cut off the ends and grate them. Place the grated courgette into a kitchen towel or nut bag and squeeze as much liquid out of them as possible. Transfer the courgette into a large mixing bowl.
Finely chop 1/2 white onion and 2 garlic cloves, then transfer to the mixing bowl.
Crumble 80 g feta into the bowl and add 100 g flour, 4 eggs, 2 tsp salt, 1/2 tsp pepper and 1/2 tsp chilli flakes. Mix all well.
Preheat a large frying pan with 3 tbsp vegetable oil. Form the mixture into patties and transfer to the frying pan. In case, the mixture is too soft to form into patties, mix in a bit more flour.
Fry patties for about 3 minutes from each side until golden.
Spread cream cheese to each pattie, followed by a slice of smoked salmon. Then garnish with some chopped dill and drizzle with lemon juice.
