Vegan Version of Pret a Manger’s Christmas Lunch Baguette

This recipe is a vegan version of Pret a Manger’s 2021 Christmas lunch baguette. The original is made with turkey and pork stuffing which I replaced by vegan chicken free slices and meat-free sausages. The cranberry sauce adds that special Christmassy touch and the crunchy onions amazing texture. The taste of this sandwich is amazing and barely differs from the original!

My favourite vegan sausages are GRO’s sizzling mushroom-based sausages and Tesco’s Plant chef sausages.

Ingredients
For 1 baguette

  • 3 tbsp vegan mayo

  • handful rocket

  • 3-4 vegan chicken or turkey free slices

  • 2 meat-free sausages

  • 3 tsp cranberry sauce

  • 3 tbsp crunchy onions

  • 1.5 tbsp olive oil

  • pepper

Method

  1. Cut 1 baguette lengthwise in half.

  2. Spread 3 tbsp vegan mayo on both halves. Now, add a handful of rockets to the bottom half and sprinkle with some freshly ground pepper.

  3. Heat 1.5 tbsp olive oil in a small frying pan. Pull 3 meat-free sausages into small pieces and fry from both sides until browned.

  4. Layer 3-4 vegan chicken slices on the rocket followed by the sausage and 3 tsp cranberry sauce.

  5. sprinkle with 3 tbsp crunchy onion.
