Salad-e-Shirazi is a fresh tomato-cucumber salad, originating from the Iranian city Shiraz. It is typically served as a side salad - often with barbequed meat. The salad is very quick and simple to prepare: The ingredients are cut very finely and then combined with a citrusy dressing. The perfect summer salad for any occasion.

Preparation time: 10 minutes

  • 3 large tomatoes

  • 1 cucumber

  • 1/4 onion

For the dressing:

  • 3 tbsp olive oil

  • juice of 1 lemon

  • 1/2 tsp salt

  • pinch of pepper

Method

  1. Cut 3 tomatoes and 1 cucumber into small cubes (the smaller the better). Finely chop 1/4 red onion.

  2. Add all to a medium-sized bowl and add 3 tbsp olive oil, the juice of 1 lemon, 1/2 tsp salt, and a pinch of pepper.

  3. Mix well and serve as a side salad. If you are preparing this salad in advance, refrigerate it and add the dressing right before serving.
