Grilled Nectarine, Burrata & Prosciutto Summer Salad

This Grilled Nectarine, Burrata & Prosciutto Salad is a more summery and colourful version of the classic Italian tomato, mozzarella & basil salad. By grilling the nectarines they release all their sweetness and flavour which in combination with the savoury prosciutto and creamy burrata is just heaven!

Ingredients
Serves 3-4 people as a starter/sharing dish
Preparation time: 10 minutes

  • 4 ripe nectarines

  • 2 burrata

  • 2 large handful rocket

  • 10 basil leafs

  • 6 slices of prosciutto

For the dressing you can use balsamic glaze or alternatively make your own dressing:

  • 2 tbsp olive oil

  • 2 tbsp balsamic vinegar

  • 1 tsp honey

  • 1/4 tsp salt

Method

  1. Cut 4 nectarines into slices. Place them in a grill pan (medium heat) or on the bbq. Flip them after about 3 minutes or when you see grill marks. 

  2. To prepare the dressing, combine 2 tbsp olive oil, 2 tbsp balsamic vinegar, 1 tsp honey, and 1/4 tsp salt.

  3. Spread two handfuls of rockets on a large plate or serving platter. Drizzle half of the dressing over the rocket.

  4. Pull 6 slices of prosciutto into stripes and pull 2 burrata balls into chunks. Add all, including the grilled nectarines, decoratively to the plate.

  5. Garnish with 10 basil leaves and drizzle with the remaining dressing.
