Kale & Apple Salad
Ingredients
2 Servings
2 red apples
100 g kale
200 g feta cheese
30 roasted pistachios
30 pomegranate kernels
2 tbsp olive oil
½ tsp salt
Italian salad dressing (I used Newman’s Balsamic dressing) To make your own dressing mix:
3 tbsp olive oil
1.5 tbsp balsamic vinegar
1/2 tsp salt
1 tsp honey
Method
Wash, rinse, and finely cut 100 g kale. Remove all stems, then transfer to a salad bowl, drizzle with 2 tbsp olive oil and ½ tsp salt. Gently knead the kale for a couple of minutes so it softens.
Wash and finely slice 2 apples.
Cut 200 g feta cheese into bite-sized cubes.
To roast the pistachios: Bring a small pan to medium-high heat, add 30 g pistachios, and cook for 2-3 minutes. Make sure to stay close to the stove to avoid burning them.
Add apples, feta cheese, roasted pistachios, and 30 g pomegranate kernels to the kale. Add Newman’s Balsamic dressing to taste.
