Jacket Sweet Potato with Feta, Sun-Dried Tomatoes & Black Olives.
These jacket sweet potatoes with a Mediterranean / Middle-Eastern twist make a delicious veggie lunch and can be baked in the oven or on the BBQ. After baking the sweet potatoes, the flesh is fluffed with a fork and mixed with grated cheese and butter until you get a creamy mash filling. Then the sweet potatoes are topped with feta, sun-dried tomato and parsley. They go nicely with a fresh cucumber-tomato side salad. If you prepare them on the BBQ, simply wrap them in aluminium foil and grill for about 40 minutes. Poke through the foil with a sharp knife to see if the inside is cooked.

2 sweet potatoes
70 g sun-dried tomatoes
80 g cheese (e.g. cheddar or gouda)
80 g feta cheese
30 g black olives
2 tbsp sun-dried tomato oil (from the same jar as sun-dried tomatoes)
20 g butter
2 tsp oregano
pinch of pepper
handful of parsley
olive oil
Method
Preheat oven to 200 °C.
Bring water to the boil in a medium-sized saucepan.
Wash 2 sweet potatoes well and cut into halves. Cook them for 15 minutes then brush with some olive oil.
Bake sweet potato halves on middle oven rack with skin facing downwards for 35-45 minutes until well cooked.
In the meantime, prepare filling: Finely cut 70 g sun-dried tomatoes and 30 g black olives, crumble 80 g feta. Place all into a medium-sized bowl add 2 tbsp of sun-dried tomato oil, 2 tsp oregano and a pinch of pepper and mix well.
Chop a handful of parsley and grate 80 g cheese, set aside.
After taking the potatoes out of the oven, use a fork to fluff the inside. Divide 20 g butter and 80 g grated cheese evenly between the potato halves and bring to melt by mixing it under the hot potato flesh until a cheesy sweet potato mash comes together.
In case, butter and cheese don’t melt properly, place potatoes back into the warm oven for a few minutes.Now, top sweet potato halves up with the feta mixture and garnish with chopped parsley and optionally some more oregano. Serve whilst still hot.
