Ice Cream Filled Brioche Bomb

I think we can all agree that brioche french toast is one of the best sweet treats on the planet. But are you ready for the ultimate upgrade from brioche french toast to deep-fried brioche french toast filled with vanilla ice cream, drizzled with Nutella and served with a side of strawberries? I guess nobody really is! This dessert is a must-try but no guarantee that you may become addicted. The best thing is that you only need 5 ingredients and the dessert is done within 15 minutes max.

All you need to do is dip your brioche slices into whisked egg, cover a scoop of ice cream with it and form into a ball. Now, deep fry the brioche bomb until golden in colour. For serving simply drizzle with Nutella and add strawberries.

Preparation Time: 15 minutes

Ingredients
Serves 2

  • 4 slices of brioche bread

  • 2 eggs

  • 2 scoops of vanilla ice cream

  • 4 tbsp Nutella

  • 100 g strawberries

  • vegetable oil

Method

  1. Wash 100 g of strawberries then cut them into small pieces.

  2. Whisk 2 eggs in a small bowl.

  3. Cut 4 slices of brioche bread and remove the crust, using a sharp knife.

  4. Fill a small saucepan about 4 cm deep with vegetable oil.

  5. Dip a slice of brioche into the egg so it is fully covered. Then, place the slice on a plate. Place one scoop of ice cream onto the slice.

  6. Dip another slice of brioche into the egg and cover the ice cream scoop with that slice. Gently press the brioche around the ice cream and form it into a ball. Make sure that all ice cream is covered by brioche. Repeat the process for the second brioche ball.

  7. When the oil is hot, carefully lower the two brioche bombs into the oil and fry from each side for 1-2 minutes until golden in colour.

    Tipp: You can check whether the oil is hot enough by sticking the end of a wooden cooking spoon into the oil. If bubbles rise the oil is ready for the frying process.

  8. Lay a kitchen towel on a plate on which you place the fried brioche bombs for all excess oil to absorb.

  9. Warm up 4 tbsp Nutella so it is runny enough to be drizzled.

  10. Serve the brioche bombs warm, drizzled with Nutella and strawberries on the side.
