Fig, Goat’s Cheese & Prosciutto Salad with Caramelised Pecans
Ingredients
3-4 figs
1 roll goat’s cheese (150 g)
80 g Prosciutto
120 g rocket
Handful of pecan nuts
2 tbsp sugar
Balsamic or fig glaze (I used Jamie Oliver’s Sticky Fig & Balsamic Drizzle -> Ocado link)
Method
To caramelize the nuts: Place the pecan nuts in a small saucepan or frying pan and bring them to medium heat, then add the sugar. When the sugar starts melting, use a wooden spoon to stir the nuts until the sugar has fully melted. Take the pan off the heat and let the nuts cool down.
Wash the figs, dry them with a kitchen towel, cut the stems off, then cut them into slices.
Cut the goat’s cheese into slices.
Place the rocket in a salad bowl, then add the fig and goat’s cheese slices. Pull the prosciutto into strings and add as well.
Lastly, drizzle all with fig & balsamic glaze.
