Salmon-Avocado & Turkey-Cream Cheese Egg Wraps

Omelette but different: The base of these breakfast rolls is egg and with only 4 ingredients you will get 2 great variations. Low carb and high protein.

Ingredients
For 1 salmon-avocado roll & 1 turkey-cream cheese roll

  • 5 eggs

  • 50 g smoked salmon

  • 3 slices of turkey ham

  • 1/2 avocado

  • cream cheese

  • knob of butter

  • salt & pepper

Method

  1. Mash up 1/2 avocado with a fork and season to taste with salt & pepper.

  2. In a medium sized bowl, mix 5 eggs with a fork and season with salt & pepper.

  3. In a pan, heat up a knob of butter and spread well. Add half of the egg mix and fry until egg is not runny anymore.

  4. Place omelette on a plate and repeat with the remaining egg mix.

  5. Spread avocado over one omelette and top up with smoked salmon. Roll omelette up.

  6. Spread cream cheese over the second omelette and top up with turkey slices. Roll up and enjoy.
