Chocolate Chip Almond Cookies

These Chocolate Chip Almond Cookies are a heavenly combination of dark chocolate, milk chocolate, and almonds. The inside texture is brownie-like and they only take 10 minutes in the oven. This year I have made these before Christmas and sprinkled them with little golden edible stars. They taste delicious all around the year though.

Ingredients
Makes 15 cookies

  • 250 g dark chocolate

  • 100 g milk chocolate

  • 60 g butter

  • 140 g sugar

  • 1 tsp vanilla extract

  • 3 eggs

  • 120 g ground almonds

  • 60 g chopped almonds

  • 60 g flour

  • 1 tsp baking powder

  • Optional: Edible stars or other Christmas decoration

Method

  1. Preheat the oven to 180Β°C.

  2. Break 250 g dark chocolate into smaller pieces and place them in a small saucepan along with 60 g butter. Melt the chocolate and butter on low heat whilst stirring so the chocolate doesn’t burn. Set the chocolate aside to cool down a bit.

  3. In the meantime, add 140 g sugar, 1 tsp vanilla extract, and 3 eggs in a mixing bowl and beat with a hand mixer for 3 minutes until frothy.

  4. Stir in the soft chocolate-butter mixture.

  5. Chop 100 g milk chocolate into small chunks.

  6. Add 120 g ground almonds, 60 g flour, 1/2 tsp baking powder, and 60 g chopped almonds to a mixing bowl and mix with a hand mixer on low speed just until combined. Add the 2/3 of the chopped chocolate and mix with a spatula.

  7. Line a baking tray with baking paper. Use an ice cream scooper (or tablespoon) to scoop the dough onto the tray (one scoop equals one cookie). Make sure to leave at least 3 cm between the cookies as they will extend in the oven. I place six cookies on a tray at a time.

  8. Press a few chocolate chunks onto each cookie. Sprinkle with Christmas star decoration.

  9. Bake the cookies for 10 minutes, then repeat the process until you have used up all the dough.

  10. Store the cookies in an air-tight container so they stay moist for as long as possible.
