Broccoli Quinoa Patties
I have made quite a few quinoa patty variations so far and this one contains one of my favourite vegetables: broccoli. I love quinoa patties because they are really quick and simple to prepare, full of nutrition and can be eaten warm or cold. This broccoli version is no exception: Within 35 minutes they are ready to be served. I really like having them with a fresh salad but they also work great as a vegetarian burger patty.

Ingredients

Preparation time 35 min.
1 head of broccoli (400 g)
150 g quinoa
3 eggs
4 tbsp flour
1/2 white onion
60 g grated cheese (e.g. cheddar)
1 vegetable stock cube
salt & pepper
1/2 tsp chili flakes
cream cheese
vegetable oil
Method
To prepare the quinoa: Rinse the quinoa well in a fine-mesh sieve under running water. Add 350 ml water to a small saucepan, crumble in 1 vegetable stock cube and bring the water to a boil. Stir the water so the stock cube dissolves.
Add 150 g quinoa to the saucepan and bring the heat down to a gentle simmer. Cook the quinoa for 15 minutes. Take the saucepan off the heat, fluff quinoa with a fork, and cover it with a lid for 5 minutes.Add about 1/2 liter of water and 2 tsp salt to a large saucepan and bring to a simmer.
In the meantime, use a sharp knife to cut the broccoli florets off the stem. Use a peeler to get rid of the tougher skin of the stem. Chop the stem into small pieces. Add the broccoli to the simmering water and cook for 5 minutes until softened. Drain the water using a sieve. Cut the broccoli florets into smaller pieces.
Finely chop 1/2 white onion and grate 60 g cheese.
Add quinoa and broccoli to a large mixing bowl along with cheese, onion, 3 eggs, 4 tbsp flour 1/2 tsp salt, 1/4 tsp pepper and 1/2 tsp chili flakes. Mix all until evenly combined.
Form quinoa mix into patties. In case the texture is too sticky or moist, mix in more flour until desired texture comes together.
Heat a frying pan to medium-high heat, add a lug of vegetable oil, then place the patties in the pan and fry for about 3 minutes from each side until golden brown.
Add 1 tsp of cream cheese to each patty and serve with a fresh salad.
