Apple-Cinnamon French Toast Rolls
French toast rolls are such a fun and tasty version of the breakfast classic. I love how you can get really creative when it comes to the fillings. In this version, I have filled the French toast rolls with probably one of the best sweet flavour combinations: apple and cinnamon. By briefly dipping the rolls into cinnamon sugar before frying them they get a nice crust whilst still soft and juicy on the inside. The cherry on the cake is a light drizzle of condensed milk as a finish.

Ingredients
For 12 rolls (serves 2 because they are addictive and you’ll come back for more later)
Preparation time: 25 minutes
For the apple filling:
2 apples
200 ml water
2 tbsp sugar
1 tbsp cinnamon
You also need:
12 slices toast
40g sugar + 1.5 tsp cinnamon
1 egg + 1 egg yolk
1 tbsp sweetened condensed milk for garnish

Method
Peel and finely cut 2 apples. Place them in a small saucepan with 200 ml water, 2 tbsp sugar. Cook on low heat for 15 minutes.
Whilst the apples are cooking, cut crust off 12 slices of toast, then use a rolling pin to flatten them.
Beat 1 egg, 1 egg yolk and 5 tbsp milk in a flat bowl, using a fork.
Combine 7 tbsp sugar and 1.5 tsp cinnamon in a second flat bowl.
Spread about 3 tsp of the cooked apples on the lower end of a slice of toast, then tightly roll it up. Repeat with all the remaining slices.
Dip each french toast roll into the egg mix, then lightly roll through the cinnamon-sugar mix.
Bring a frying pan to medium-high heat, add a big knob of butter, then add french toast rolls and fry for 2-3 minutes from both sides until browned.
Drizzle french toast rolls with 1 tbsp sweetened condensed milk and serve whilst warm.
