Almond Bars
Making your own almond energy bars at home is incredibly simple and takes just 15 minutes of prep time! These delicious bars are perfect for a quick snack or a boost of energy. If you prefer, you can easily substitute almond butter with peanut butter for a different flavour.

Time in the freezer: 1 hour
Ingredients
For 6 bars
100 g almond butter or peanut butter
45 g maple syrup
1 tbsp coconut oil
45 g rolled oats
75 g almonds
1 tsp almond extract
pinch of salt
Method
Melt 100 g of almond butter and 1 tbsp of coconut oil in a small saucepan over low heat.
Remove the saucepan from the heat, stir in 45 g of maple syrup, 1 tsp of almond extract and a pinch of salt until well combined.
Roughly chop 75 g of almonds.
In a medium-sized mixing bowl, combine the almond butter mixture with 45 g rolled oats and the chopped almonds until evenly combined.
Line a small baking dish (15cm x 20cm) with baking paper. Transfer the mixture to the baking dish and use a spatula to press down very firmly.
Place the baking dish in the freezer for about an hour.
Remove the bars from the baking dish, let them rest at room temperature for about 15 minutes. Use a sharp knife to cut them into six evenly sized-bars.
Store the bars in an airtight container either in the refrigerator or in a cool, dark place.
